My Red Sauce

This sauce is my uber flavorful red sauce which is better with foods like the stuffed peppers, porcupine meatballs, etc... I use a different sauce with similar ingrediants for spaghetti sauce.

28oz canned crushed tomatoes
Garlic- minced
onion powder
pepper
crushed mint
marjoram
basil
oregano
thyme
rosemary
sugar- 1tbs

Here's the hard part. I never measure my spices, i've been making my own sauces for so long that I just never need a measuring spoon (except for sugar) for them. What i ALWAYS advise my friends to do is the following:

Start with 1tsp of every spice. Let simmer until warm, taste. If you feel like it needs something more for your taste, start with the spices like: garlic, marjoram, basil, & oregano. Increase by the teaspoon and taste again. if it's still not to your taste, try the garlic, basil and marjoram. Of course, you can just keep adding all the spices until you like them. Add crushed peppers & paprika if you want to up the flavor to be something more smokey and spicey. It really is easy. If you want or need better measurments, leave a comment and I'll be sure to measure next time I make this sauce. :)

Stuffed Peppers

This is my new favorite stuffed peppers recipe.

Serves: 2

2 large Peppers (I used sweet yellow)- top cut off, ribs & seeds removed
----
9oz ground turkey
3/4c Rice
2 egg whites
1/4c onion- chopped
1c Mushrooms-chopped
1c Spinach- chopped
4tbs ketchup
------
Italian Seasoning
Garlic-minced
pepper

Mix all 2nd tier ingreidants together, add 3rd tier ingrediants. i never measure spices unless I'm baking. I always do to taste. If i had to guess at my measurments, I'd say 2tbs garlic and italian seasoning & 1tsp pepper. Stuff into Peppers. This filled 2 large-ex large peppers to over flowing.
Add into pan of tomato sauce (my recipe listed seperate), simmer until cooked. i think it took 40 minutes.
I KNOW i'm so bad... I should have watched the clock. While cooking I continually spooned sauce over the peppers.

This came out SUPER UBER YUMMY!!

Calories according to Mydiet on facebook came to 437 w/ 2oz of tomato sauce added in there.

Fish bowl

Hahaha!! trying to figure out what to name this recipe... and Fish in a bowl came to mind and Fish bowl made me laugh. hahahha!!! Doesn't SOUND appetizing but my word it is " ZEE BEST!!! Oui Oui" Ok... I must be more awake than I thought. hahahhaha!!

6oz of fish (i used orange roughy)
1c mushrooms- sliced
1/4 onions- sliced
1/2c yellow sweet peppers- sliced
1/2c Zucchini- Sliced & quartered
1c Spinach leaves- whole
Old Bay seasoning (to taste)
Tones Salmon and Seafood seasoning

First coat pan with pam type oil... I use actual Olive oil and then spread it in the pan with a paper towel to coat pan. Mostly all of it ends up on the paper towel. add in all vegi's but Zucchini and Spinach. Add dash of the salmon and seafood seasoning. Saute until mushrooms are just starting to get tender. Season both sides of fish with Old Bay and salmon seasoning. Push all vegi's aside so that there is a ring of vegi's and (if pan is too dry add more oil JUST where fish is going in) add fish. Add Zucchini to pan with other vegi's. Stir vegi's and flip fish 1/2 way thru. When Fish is cooked thoroughly throw spinach leaves on top. When they are wilted to your liking break fish apart into pieces and throw into a bowl... wallaaaa... fish bowl.

Cooking the hardest vegi's first like this will help give you a nice roasted flavor in the peppers; your onions will get caramelized some and the mushrooms will be very tender while the zucchini being added with the fish, it won't be mushy. I've never been a BIG fan of cooked spinach unless it's in something. I decided to add it at the last minute as an added nutrient booster. OMG! I couldn't even really taste it and it really added a very good flavor to the dish. i can't describe it.

You could make this with Chicken if you don't like fish and just change up the seasonings... And I'd start the chicken before the vegi's depending on how thick it is. Although If I ever make it with chicken, I can guarantee you I'd use the same seasonings. :)

Because I don't count my oil, this dish was only 4pts as the roughy I buy is 2pts per 4oz of raw fish. WHOHOO!! Last night I thought it was 6. WOW! It was filling AND really low points. What a deal. If you count your oils in your points be sure to change the points for the meal.

Chicken Stroganoff

9oz Chicken- boneless, skinless breasts- cut into bite sized pieces - 9pts
1/4c chicken broth- 0
1/4c Dry cooking Sherry - 1.5pts
1/2c nonfat plain greek yogurt - 1pt
2.5c mushrooms- 0pts
cooking spray

In baking casserole spray cooking oil. Combine all ingredients, minus the yogurt. Bake at 350until chicken is cooked through. Add yogurt and stir until combined.

Total points: 11.5pts
Serves- 2
Points per serving: 6- rounded up from 5.75

I like to serve this with Noodles.
My favorite: the Ronzoni smart pasta's. hhhmmmm...
This is also good with broccoli added, but steam first, then add before serving to keep from getting soggy.

Smoothie

1c fruit: your choice - 1pt
My pick: 2 strawberries chopped, 5 blackberries, the rest of my 1 cup is frozen pineapple and frozen mango
1 sm banana - 1pt
4oz OJ (I use tropicana 100% juice) - 1pt
2oz NonFat plain Greek yogurt - .5pt
4oz skim milk - 1pt
1 tbs protein powder
1tbs wheat bran

Add all ingrediants and blend well.

Total= 4.5pts

Completely yummy alternative to breakfast. AND double bonus is using fruits in the house that are going a little... too ripe that i won't eat, instead I use them this way.... Makes it super sweet too :)

Chicken & Squash Terriyaki

Spray cooking oil (like pam) into bottom of pan
Mix together:
4tbs Terriyaki sauce
1tbs brown sugar
1tbs garlic
dash chili powder
dash paprika
dash pepper

Add bite sized pieces of:
11oz Chicken- boneless, skinless, fat trimmed off
1 yellow squash
1 zucchini
1 red pepper
1/4 red onion

Mix all ingredients together. Marinate then cook @ 375 until Chicken is cooked. Time varies on how big your pieces are.

Total WW points for entire dish: 13pts
2 servings: 6.5pts
4 servings: 3.25pts

Servings options: Serve over brown rice. hhhmmmm... :) Just be sure to add the points for the rice. :)

Home made fruit yogurt

I make this one for my daughter instead of buying flavored yogurts these days.

1/4c plain nonfat greek yogurt
1/4c fresh fruit - pineapple, strawberries, blackberries, ect....(whatever you or your child like)

Puree fruit to chunkiness that you like. I do mine smooth since she won't eat the chunks yet. mix into Yogurt. Add honey for additional sweetness if desired. The natural sweetness of the fruit you choose will help you decide if additional sweetener is needed. Mix until smooth and well blended. They'll eat it up and it's healthier, lower in fat, has added fiber, no artificial sweeteners, etc... than anything you could possibly buy. :)

If she is constipated... this is the PERFECT place to add "additions" for helping to solve her problem. It's all masked in the yogurt and she eats it like it's candy (it's that good of a recipe) and doesn't even know about the "additions"
